📍Balbacua. Originated in Visayas region. It's a spicy thick stew of beef brisket and ox tail. Very delicious.
📍Fried Chicken. This is also good. Meat is very tender and moist. You can easily separate the meat from the bone.
📍Halo-halo and Mais Con Yelo. Very refreshing. Best for this summer season!

We came to try the 4 latest additions to their rice bowls. My favorite was the seafood kare-kare; the sauce was good, it’s thick and the nutty. I also like the spicy tofu. And for dessert they gave us their take to the famous calamansi muffin from Boracay. Calamansi infused caramel bars.

Part of our culture is the sumptuous dishes that describe the uniqueness of every place across the country. Our own flavors are getting a lot of attention due to its original tastes and techniques of cooking. It’s no longer a surprise that even internationally, we are getting recognized because of our distinct flavors that evolved through time.
This store in Bonifacio High Street has recently been converted to Max’s Kabisera, a move that combines two distinct Filipino recipes in one roof. You have a more traditional Max’s with a rich heritage and Kabisera with a more modern element to it.
Today, together with other media personalities, Max’s team launched their 4 new rice bowls. Now customers have more reasons to keep coming back to any of the more than 100 branches of Max’s all over the country.
Seafood Kare Kare was my top choice. This bowl has a combination of shrimp, squid, and fish blended with extra creamy, sweet peanut sauce. No need for bagoong on this one.
Max’s also has the classic take on Sweet & Sour Fish Fillet and a healthier alternative in Chopseuy Rice Bowl. If you fancy some heat, they have the Spicy Tofu as well. This one is mixed with special mayo, topped with fried egg.
They now have a total of 12 varieties, each one with its own set of characteristics. Max’s also has the Chicken Sisig, Adobo Ribs, and Beef Caldereta just to name a few more of their unique single-serve creations.
Since we were in Max’s Kabisera, our table also got dishes from this collaboration. We had Kabisera’s Lechon Pugon, lean and tasty pork and Sinigang na Pula, a familiar tangy soup made more interesting with plump red tomatoes. On Max’s end, we had the best-selling Fried Chicken paired with strings of sweet potato.
It was indeed a gastronomic filled event. We even had the opportunity to taste calamansi infused Caramel Bars, an idea they picked up from Boracay’s famous Calamansi Muffin.
Max’s a known family restaurant is now also targeting solo diners too. I am glad they are doing that as I often eat out by myself.
We had our family Christmas celebration here. We reserved a table for our group. It was easy to make a reservation.
The food is good. Loved the adobo back ribs!
Service was very good. We had 18 people in our group, and they were able to attend to our needs.
Well I had nothing to do and passed by this place with s friend in bgc. Drinks are ok and I was not able to stay here long but will probably visit this place again some time if schedule permits.
With the local food scene getting crazier and crazier each day with the number of new brands and concepts opening in every corner, there are still classics that I go back to with Max's as one of my go to restaurants when it comes to Tofu Sisig, Pancit Canton and of course, fried chicken. And when it merged with my other favorite Filipino restaurant Kabisera, it felt like it was an early Christmas gift.
A arm of dencios and pancake house group, it is their attempt to be part of the hip drinking crowd of bgc, food was ok, alcohol choices are normal. Ambiance is very nice!
I made the right decision in choosing this place to celebrate my birthday. It's our first time to try Kabisera for lunch and their food didn't disappoint us. We ordered crispy pata, house wings platter, sinigang na hipon, garlic rice, seafood pancit canton, kwek kwek (why not? Haha), and some desserts (ube and chocolate ice cream, buko pandan, and leche flan). Everything tasted good and their staff were accommodating enough.
Just a tip though: if you are going to bring a cake, you can't eat it inside (and I'm not sure why). You can only display it for picture taking purposes.
More importantly, we really enjoyed our lunch and I highly recommend this restaurant. We will definitely go back soon. 🙂
We ordered bagoong rice, bangus sisig, pakbet and crispy pata and for me all of them are 5/5.
I’ll will come back to try their sinigang na hipon. Most of the diners around us ordered it and the smell is too good not to notice.

The Get 8 for P550 is absolutely cheap! Thanks Kabisera for giving us great service yesterday. The ambiance is very dramatic because of the shadow. Staffs are very attentive and polite. Great Service!
Food was average, however I was disappointed with how slow the service was. All we ordered was the pork bbq and rice. It took 45 minutes. Ambiance has improved since the renovation and it has more natural light and it’s more open.
Kabisera is one resto bar place in BGC that has a Filipino distinct taste. We tried the Sinigang na tuna which is my favorite. It has a bit artificial "asim" taste but I love the way the veggies cooked well with the broth. Their lechon pork belly and their ensaladang talong with seaweed is a good combination for me, if you want to cut off your rice. Their Pork BBQ, on the other hand, is better compliment for any brunch meal. And I love their brewed ice tea.
Very good location, ambience is good.
Recommended for family and friends.

Filipino resto bar in bgc. Food was good! The gising gising had the proper spice, not to mention scrumptious pork and shrimp toppings. Sisig was tasty and not too oily. Kare kare was thick and really peanut buttery, no ifs no buts. Crispy pata though was a tad dry, could still be improved.
What I liked most about this place was the ambiance, the architecture. It was well thought of. It has an open bar where you can hang out for a drink. Restroom was also well-maintained.
Planned to have some quick merienda and then to drink booze. But ended up eating a lot.
What to order: Ensalada ng kabisera, sisig bangus, beef salpicao, and heavenly garlic rice. Pause for a moment to appreciate foodgasm happening inside your mouth. For booze, we ended up getting 8 bottles of beer for 540php with free appetizer. Burp! We still manage to order basket of tusok tusok after lol
Ambience: since its renovation it was from 0 to hero. Service and staff are very assistive and attentive. Good job guys!
I was honestly a bit hesitant to try this place out a first because of how unwelcoming and dark the entrance looked (it was the eating area for smoking customers). I was immediately mistaken the moment I entered though!
While the outside looked very uninviting, the inside was the complete opposite. The staff were very bubbly, the interiors looked like any other modern Filipino house (half wooden and half Western), and it gave off chill vibes.
The food was delectable! They serve your classic Filipino dishes in very appetizing plating techniques.
1. Delicious food. It's like eating in a hotel restaurant. The food is carefully curated. The plating is very pretty hehe.
2. Price-wise, it's affordable. Average of 280-350 per dish.
3. Serving is quite tiny, though. If you have a big appetite, I'd recommend getting your own dish. It isn't exactly sharing-friendly -- unless you and your friend have petite appetites. My friends and I have tiny appetites so we were able to share.
4. They serve a handful of classic Filipino dishes! It's a classy take on home food.
5. I think this place is perfect for having a classy lunch out with your family. It's more family-oriented than friend-oriented for me.
6. Good stuff! Go give it a visit :-) The staff in this branch are also oh so accommodating.
We went here to celebrate my officemate's birthday. The service was good because they sung the Happy Birthday song upon giving the cake 😂😂. The food tastes good for La Oya and Laing and bangus sisig however we are kinda disappointed with the price of mixed street food which cost us 120!
I admit this resto improved a lot since I was here more than 6 years ago, from the Service and Quality of food. Server was friendly and prompt. We had Bangus Sisig which was quite Spicy for me, Pork sisig nothing special and price was expensive. What standout was the Balbacua, oxtail slice cubes in a thick tomato sauce. Will go back to try the lunck specials

The ambience was great and so was the food. We had Street Food (Kikiam and Fishball) and Mixed Chips for our appetizers. For different palate preferences, there are a variety of sauces for the fishballs and kikiam. As for the chips, I was so amazed at their creativity in turning kangkong leaves into something beyond veggie cooking. If I'd be eating chips the whole day, I'd be going for this. The dip is also perfect. We also had Bahay Kubo, Sinigang na Hipon and Kare-kare. For someone who's not a fan of kare-kare, I loved theirs.
Ah, I'd come back for some of their food one of these days. This is worth trying, friends.

4 new rice bowl variants are exclaimed in today’s media launch at Max’s Kabisera.
to put you in a good mood, the seafood kare-kare made w/ a combination of shrimp, squid and fish slow cooked in creamy peanut sauce accompanied by their bagoong was goooood. the spicy tofu headlines by deep fried tofu cubes tossed in a special spicy mayo base,m and served w/ a side of fried egg was creamy nummy. the sweet and sour fish fillet made w/ breaded cream dory doused in a combo of sweet and tangy was real too sweet for me. lastly, the chopsuey rice w/c features a symphony of sautéed fresh vegs, pork, shrimp and chicken liver and gizzard is one classic favorite of mine that i wont get tired of.
currently, max’s rice bowls are on a 11 headcount and they’re brewing up a 12th wildcard, unannounced and exciting new bowl that’s soon to be unveiled. for now, these rice bowls are sure to satisfy your cravings for delicious and filling pinoy foods starting at 149php.

..had our office Christmas party here last night and out theme was boho inspired, but the food stayed true to its Filipino roots. i arrived late, so i didn't get the chance to snap a shot of the edibles on my table, these are some of what my friends were able to save before gorging on the fest pre-party-proper. i thought we had the whole 2nd FL to ourselves, turned out we still had to share it w/ the crowd, w/c made me awkward and anointing for them because there was no division to separate us from the diners - imagine a ton of noise and rowdy party-goers heedless to the general public. anyways, the service was great but the food was typical, because it's filipino and it's sort of what i can cook at home when i want to. surprisingly, crowds gather and enjoy their night away. means, this place has something to give!
My family loved Kabisera even before the renovations and the upgrade. It is the one place that I can bring my picky-eater parents and be sure that they will go home happy and satisfied.
I learned that they're part of the Max's group now. They probably have some dishes in common. But I realized that I like their KARE-KARE more. There's actually a lot to choose from. Price is reasonable too.

Filipino comfort food at its finest. You can't go wrong with crispy Pata and Sisig. But other offerings in the menu are quite good as well. Try the nila wing salmon and bangus Sisig!
Ambiance makes a huge difference. Food is incredibly good yet cheaply priced. Perfect plan to hang out if you crave local dishes. A go-to place for me.

I don't eat a lot of Filipino food very often but when I do, I make sure it's worth it; and coming to the newly-improved Kabisera was an experience! Definitely a lot more fancier than the traditional Filipino rstaurants but the I can definitely say that the food is just as delicious as the ones cooked by our Mums at home.
We tried several items on the menu but my favourites were the Balbacua, Liempo Chips, and Pork and Beef Sisig.
Their Balbacua Soup (good serving proportion) was one of the tastiest soups I've had in a loooong while. Highly recommended! Also, their Liempo Chips were great, add the slightly spicy vinegar dip that goes with them...sublime! The sisig was seasoned perfectly--crispy and flavorful. I've always envisioned it to be more on the greasy side but this dish came out to be okay.
Though a bit pricier for Filipino food - you're definitely paying for the amazing atmosphere/ambience, service, and the quality of the dishes is top-notch. The meal was overall, delicious and I would love to return to try more.
I really liked the place! It's very hippie and perfect for chill hangouts and dinners. I had the buy-one-take-one drink promo from 6pm-8pm (if I'm not mistaken). Food choices were refined local dishes. We ordered the street food bucket which was presented very nicely though the service time for our orders were quite slow, I still loved the fishballs, kikiam, squid balls, chicken balls, and the sauces it went with.
Early lunch here at Kabisera, and been craving for some beef kare-kare for some time now, and Kabisera did not disappoint. Also loved the sisig and the tortang crabmeat. Great Filipino food! Wished I ordered more, will probably just come back soon.
The interior was inviting. Since my preference is outside sitting, I gave it a go. The crew has a positive vibe after they greeted me with "Hello, ma'am." once they saw me looking for a chair.
Their menu is straightforward, and I ordered an appetizer called "crispy liempo chips" and it did not disappoint.
If you want to spend the rush hour to pass, stay here until 8:00pm and get their "two for the price of one" promo on local beers. Recommended for people who are waiting for the Uber/Grab surge to come down.
Kabisera is a newly revamped & renovated Kabisera ni Dencios at the end Bonifacio High Street. The interiors are of old manila, with the X foldable gate designed at its doors with glass, antique wood carving above the bar, and some wood finishes. It shows we are a classic Filipino restaurant.
We had our dinner with the group here and had these dishes:
Liempo Chips was cornstarch breaded thinly sliced pork belly with a crunch at each bite. Perfectly paired with their artisan vinegars.
Street Food Platter is our usual kikiam, fishball, tempura battered. It was served with 3 sauces, sweet brown sauce, vinegar, seeet chili dip. It was a creative take on our usual side street fare.
Isaw or chicken intestines was similar to the street griller but a bit overcooked. I like my isaw on the soft, chewy side, not the crunchy, tough ones.
Sisig was the classic, crunchy sisig of Dencios made with pork mask.
Beef Kare Kare was nice and flavorful with a light nutty richness. It lacks the umami profile from the meat. I've had better kare kare from other establishmens.
Gambas. Peeled shrimps cooked in the rendered oil of chorizo with paprika and lots of garlic. Their representation of this dish just presents how our cuisine was influenced by the Spaniards.
Bahay Kubo was their version of pinakbet. Flavorful vegetables cooked in fermented shrimps (bagoong). Best eaten with rice.
Balbacoa is a traditional Bisaya dish by simmering beef bones and some innards for hours to get the tender richness flavored with turmeric and garlic. It has a rich, collagen richness but yet it has a light broth.
Halo halo was not your usual ice dessert filled with dozens of toppings and an ice cream. Their version was leche flan, sweetened banana, macapuno, and lots of milk. It was simple, rich, creamy, and sinful. It was the perfect dessert to end the day!

When I first saw Kabisera, I thought, "Nah, not my type of dining establishment!" It's posh-looking, but at the same time, I became curious because of a sign that says they have street food! Thankfully, this was part of our BGC food crawl, and it did not disappoint at all!
Among the dishes we tried, my favorites were the gambas chorizo, street food platter, and sisig! The gambas chorizo has a good salty-sweet mix that you'll definitely one a lot of rice with it! The street food platter is like their version of tempura, with a batter that's not too thick, plus the dipping sauces, especially the vinegar, were also good! I was kind of surprised with the sisig because I thought it was dry at first, but after a while, I found myself eating more of it! Extra rice, please! Ohhhhh and how could I forget their garlic liempo chips?! They're so flavorful and sinfully good, you'd want to eat an order all by yourself!
Kabisera is also known for their halo-halo, and yes, it is really good! It's easy to mix, not too sweet, and refreshing! It's like "drinkable" halo-halo! I am drooling as I type this haha :p

The newly renovated and revamped menu, restaurant is on to my liking. Before the restaurant had an old filipino home feel that wasn't too comfortable but now they have that modern design that suits today's social trends. Now time for the food!
Bangus Sisig
The bangus sisig was good but was kinda oily. Perfectly cooked but expected more of the bangus fat (middle part of the bangus) to be more prominent but was sadly disappointed to only get a slight taste of it.
Lechon Kawali
No doubt any filipino restaurant should excel in their lechon and kabisera really delivered. It was thick, long and delicious. Sadly, i don't think it was worth paying 300+ for that dish as compared to other better and cheaper dishes.
Gising Gising
Perfectly seasoned and the vegetables were perfectly cooked. Tender and no hardness or bitter taste to it. Oh, it has chicharon and shrimp to complement the dish that makes it really over the top.
Chicken Wings
The chicken wings were good but then they tasted too similar to pancake house fried chicken. Not complaining but it was just too similar.
Chicken Barbeque
Without a doubt this was the dish that capped off the dinner. Juicy and tender chicken skewers cooked to perfection along with natural skewered vegetables that goes along with it. A must try!
Service
Surprisingly the service was fast even though our table was kinda set in the back and in the second floor. Got our bill in less than 5 minutes.

Yummy Filipino restaurant best describes Kabisera. It is a high end version of Dencio's. Some of the best things to order are their Kare Kare, Pork Sisig, Inihaw na tiyan ng bangus, Chicken Asado. Service is fast and pricing is reasonable. Serving sizes are usually for 3-4 pax. The restaurant tends to be crowded during dining hours.
Kabisera by Dencio finally renovated their bgc branch. The clean, modern, and rustic feel is a different take from the brand is known for.
I particularly liked their house wings platter - serving was a lot considering the price.
Bahay kubo and beef salpicao is not bad either. Will definitely go back and try their bar area!
Dencio's was a favorite of mine specially their nilasing na hipon but i love kabisera more...it has more of a fine dining feel to it. I love their watermelon shake, sisig and bagoong rice. They put a twist to some of the simple filipino favorite dish. This is recommended for balikbayans too!

This fancy (and pricey) restaurant is one of the best filipino restaurants I ever ate in. Their kare kare and lechon kawali are the dynamic duo that made me go back there a second time. Also like their crispy sisig which my wife loves as well.
Food are great and maganda ung lugar. True Filipino aura.

When craving Filipino food, I only go to 2 restaurants. Elias and Kabisera. There is something about Kabisera's flavors that's a tad more flavorful and adventurous than the more upscale and traditional Elias. Kabisera has always been and will always be my BGC first love.
When I started working in the Fort i was on the lookout for good filipino food. Apparently there weren't as much options, the place being more for expats and all. kabisera came to my rescue. I love how the set up was very down to earth yet beautifully Filipino. Tables are mostly for sharing, and there is a small enclosure for a smoking area / bar that has insane happy hour beer promos. It was love at first below zero beer.
The food is amazing and on point. Perfect portions for sharing, and a great diverse menu of both Ilocano and Visayan dishes. Like I said, they are a bit more adventurous and comes up with some really good limited time specials monthly!
But my staple favorites here: their Iloilo molo on rainy days, or their sinigang, of course. Dinakdakan, which is so hard to find anywhere else is also served here and done well! Tortang Talong with crabmeat was amazing - flavorful but not overwhelming. The seafood binakol was so good, perfect mix of coconut cream and spice. And the malamang crispy pata was indeed malaman, so you dont feel robbed.
I love how casual this place is, kind of reminds me of the kinds of restaurants that my mom would pick for dinner after sunday mass. At the same time a lot of the people working in the fort come here because of their drink promos, so it turns into a pre-party party at night.
I definitely recommend this place!
