The smoked malasugi kinilaw. I'll be honest I was expecting a waste of great fish when I first saw this on the menu. I was expecting a so and so kinilaw hyped up with use of a more expensive fish than tuna. The fish was perfectly smoked. The texture of the fish was meaty and juicy. The acidity of the marinade did not cook the fish like a Mexican style Ceviche where the fish was left to cook in the marinade, it was more like a Peruvian style ceviche where timing is everything. Now Let's get to the leche de tigre. The sauce was simple not over powering any element of the dish even though it was spicy. Every other ingredient was well thought of and complimented the whole experience. The cucumbers, the chilis and the onions all worked well together then the pomelo pieces added an element that was more like a reset button for my palate. This dish goes from first base, second base, third base and then a home run (yes it's a sex analogy). This is a dish that you plan for if I was back in Cali. I would "medicate" with a nice sativa like a jack herrer before the meal and pair this with a nice and bright Chardonnay from either the Russian River valley or nice young French one. And this is just one dish on the menu. #fuckthatsdelicious.
Great food, great drinks, great ambience and awesome service! We didn't have enough local cash as we were visiting from overseas but the staff was kind enough to help us draw cash from an ATM. We visited 2 nights in a row and we will come back just bec its an awesome experience. Respect that they do not receive card payments. Don't blame the staff or the bar. Cheers again Alamat! ��
